Hawaiian Chicken Kabobs

Tropical and tangy Hawaiian chicken kabobs, perfect for summer grilling.

  • 1 lb boneless chicken breast
    cubed
  • 1 fresh pineapple
    cut into chunks
  • 2 bell peppers
    cut into chunks
  • 1 red onion
    cut into chunks
  • 1/2 cup soy sauce
    liquid
  • 1/4 cup brown sugar
    packed
  • 1 tbsp sesame oil
    liquid
  • 2 cloves garlic
    minced
  • 1 tsp ginger
    minced
  • 2 tbsp apple cider vinegar
    liquid
  • 8 skewers
    pre-soaked in water
  1. In a mixing bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and apple cider vinegar to create the marinade.
  2. Place the chicken cubes in the marinade and let it sit for at least 1 hour in the refrigerator.
  3. Preheat grill to medium-high heat.
  4. Thread the chicken, pineapple, bell peppers, and red onion onto skewers alternately.
  5. Grill kabobs, turning occasionally, until the chicken is fully cooked and the vegetables are tender, about 10-15 minutes.
  6. Serve the kabobs hot, possibly over rice, garnished with sesame seeds or chopped cilantro if desired.
