Classic Chicken Enchiladas

Classic Chicken Enchiladas

Savory and hearty chicken enchiladas, perfect for a comforting dinner.

  • 12 corn tortillas
    whole
  • 3 cups cooked chicken
    shredded
  • 2 cups enchilada sauce
    liquid
  • 2 cups Monterey Jack cheese
    shredded
  • 1 white onion
    finely chopped
  • 2 garlic cloves
    minced
  • 2 tbsp olive oil
    liquid
  • 1 tsp ground cumin
    ground
  • 1 tsp chili powder
    ground
  • 1/2 tsp salt
    ground
  • 1/4 cup fresh cilantro
    chopped
  • to serve sour cream
    optional
  • 1 lime
    wedges
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a pan, heat olive oil over medium heat. Sauté onion and garlic until tender.
  3. Add the shredded chicken, 1 cup of enchilada sauce, cumin, chili powder, and salt. Cook for 5 minutes.
  4. Dip each tortilla in the remaining enchilada sauce to coat both sides. Fill with the chicken mixture and a sprinkle of cheese, roll up, and place seam side down in a baking dish.
  5. Pour any remaining enchilada sauce over the rolled enchiladas and sprinkle with the remaining cheese.
  6. Bake for 20 minutes or until the cheese is bubbly and golden.
  7. Garnish with chopped cilantro and serve with sour cream and lime wedges on the side.
