  • 1 cup Cashews raw or roasted, depending on preference
  • 2-3 tablespoons Honey adjust to taste
  • 1/2 cup Oats optional for texture and to make more filling
  • 2 tablespoons Chia Seeds or Flaxseeds optional for added fiber and nutrients
  • 1 teaspoon Vanilla Extract optional for flavor
  • 2 tablespoons Cocoa Powder optional for chocolate flavor
  • 1/4 cup Shredded Coconut optional for coating the balls and added flavor
  • 1/4 cup Protein Powder optional to increase protein content

  1. Soak the dates in warm water for about 10 minutes if they are not soft. Then drain them and set aside.
  2. In a food processor, blend the dates and cashews until they form a sticky, dough-like consistency. You might need to stop and scrape down the sides a few times.
  3. Add the honey and any of the optional ingredients you like into the food processor. Pulse until all ingredients are well combined and the mixture sticks together easily.
  4. Using your hands, roll the mixture into small balls, about the size of a walnut.
  5. Roll the balls in shredded coconut or cocoa powder for an extra flavor and texture (optional).
  6. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to set.
