Soft Banana Blueberry Cookies

  • 2 ripe bananas mashed
  • 3/4 cup granulated sugar granulated
  • 1/2 cup unsalted butter softened
  • 1 egg whole
  • 1 tsp vanilla extract liquid
  • 2 cups all-purpose flour sifted
  • 1 tsp baking soda granulated
  • 1/2 tsp salt granulated
  • 1 cup fresh blueberries whole
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the mashed bananas, sugar, and softened butter until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the sifted all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the fresh blueberries gently to avoid breaking them.
  7. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the cookies are golden brown and set.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
