Pork Sausage and Bean Delight

A hearty dish combining pork sausage with beans for added fiber. Perfect for a fulfilling meal.

  • 4 pork sausages whole
  • 1 can cannellini beans drained and rinsed
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 can diced tomatoes with juice
  • 2 cups chicken stock unsalted
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper
  • for garnish fresh parsley chopped
  1. Heat olive oil in a large skillet over medium heat. Add the onions and garlic, cooking until softened.
  2. Add pork sausages to the skillet and cook until browned on all sides.
  3. Stir in the cannellini beans, diced tomatoes with juice, and chicken stock. Bring to a simmer.
  4. Season with salt and black pepper. Cover and let simmer for 20 minutes, or until the sausages are cooked through and the flavors have melded.
  5. Garnish with fresh parsley before serving.
