Homemade Gingerbread Men

Delightful gingerbread men cookies perfect for the holiday season. These cookies are spiced with ginger, cinnamon, and nutmeg, and have a wonderfully soft yet crisp texture.

  • 3 cups all-purpose flour
    sifted
  • 1 tsp baking powder
    none
  • 1/2 tsp baking soda
    none
  • 2 tsp ground ginger
    none
  • 1 tsp ground cinnamon
    none
  • 1/4 tsp ground cloves
    none
  • 1/4 tsp ground nutmeg
    none
  • 1/2 tsp salt
    none
  • 3/4 cup unsalted butter
    softened
  • 1/2 cup dark brown sugar
    packed
  • 1 egg
    large
  • 2 tbsp molasses
    none
  • 1 tsp vanilla extract
    none
  1. In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  2. In a separate bowl, beat the butter and brown sugar together until light and fluffy. Add the egg, molasses, and vanilla extract, and beat until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Divide the dough in half, wrap in plastic, and chill in the refrigerator for at least 2 hours.
  5. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  6. On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut out gingerbread men shapes with a cookie cutter.
  7. Place the cookies on the prepared baking sheets and bake for 8-10 minutes, or until cookies are firm and edges are slightly browned.
  8. Cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
