Vegan Oatmeal Chocolate Chip Cookies

Delicious and chewy vegan cookies loaded with oats, chocolate chips, and a hint of cinnamon. Perfect for snack time or a healthy dessert.

  • 1 1/2 cups rolled oats dry
  • 3/4 cup whole wheat flour dry
  • 1/2 tsp baking soda dry
  • 1 tsp cinnamon ground
  • 1/4 tsp salt dry
  • 1/2 cup coconut oil melted
  • 3/4 cup brown sugar packed
  • 1 tsp vanilla extract liquid
  • 1/4 cup almond milk liquid
  • 1 cup vegan chocolate chips solid
  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix together oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, combine melted coconut oil and brown sugar until smooth. Stir in vanilla extract.
  4. Add dry ingredients to wet ingredients and mix well. Gradually add almond milk to form a dough.
  5. Fold in chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until edges are lightly browned.
  8. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
